do you lose complete control of the knobs on your synth if you are using one of these? like if you have got it controlling the filter cutoff does fucking with the knob stop working?

no actually, the c/v gate converters can steer old analogues that have trigger c/v inputs to drive the filter if this feature is provided on the synth.
