HQ, this is a wild guess but your scenario sounds a lot like ear fatigue. I don't know how you make beats but the more you listen to your beat (as you're making it), the more your ears will tend to hear what your mind wants them to hear. If your beat sounds great while you are making it then you stop and come back even a few hours later and it doesn't sound the same it's because your ears are tired and your brain has taken over and started making corrections. If you've never heard of this, I'm sure it sounds kinda crazy but this is why Professional Mixers and Masters take big breaks while working on a song.

i Know How You Feel ive only been making beats about 2 years and so far every 6 months i delete everything off my computer, part reason to make space and start fresh but the main reason is because i do what fade said as well i will make a beat thinking it dope as hell then in a week ill HATE it and delete it and act like it never happened, but now im realizing i shouldnt have deleted a damn thing cuz as im getting better i could go back and fix old projects or at least have all the sounds, half the time someone from a while ago plays one of my old beats im like dam i wish i knew what sample that was id kill it now.
just take a long ass break, untill you feel the erge to HAVE to make a beat. then youll think "why was i trippin again?" lol or maybe get some new gear, something to just re ignite the fuze
